Nothing says Autumn like a warm bowl of hearty chili! Made with extra-lean ground beef, tomato sauce, a few veggies, and spices, this dish will warm your heart, body and soul!
Chili con Carne
Makes 4 - 6 servings
1 tbsp olive oil
1 lb extra lean ground beef (optional for vegetarian option)
1 can (16oz) tomato sauce
1/2 - 3/4 can (8-10oz) diced tomato
1 can (16oz) kidney beans, drained and rinsed
1-2 sweet green pepper, diced
1/2 yellow onion, diced
2 medium-sized carrots, chopped
1-1/2 tsp salt
1/2 tsp black pepper
2-1/2 tsp chili powder
1/4 tsp cayenne pepper (optional or to taste)
1 tsp cumin
In a saucepan over medium heat, add olive oil and onions and cook stirring often until onions are softened. Add the ground beef and cook until browned, breaking it up in pieces as you cook.
Add the carrots and green pepper stir.
Add the spices and stir to coat all ingredients.
Add tomato sauce, diced tomatoes, and kidney beans. Stir.
Lower heat to low, cover and let cook for 45minutes to 1-1/2 hours. Add water if the chili is too thick.
Serve with shredded cheddar cheese, sour cream, diced green onions, or a side of mashed potato or spaghetti!
