Oatmeal & Coconut Cookies

Original receipt can be found here.

- 1/2 cup butter, softened

- 1/2 cup shortening

- 1 cup sugar

- 1 cup packed brown sugar

- 2 large eggs, room temperature

- 1 teaspoon vanilla extract

- 1-1/2 cups all-purpose flour

- 1 teaspoon baking soda

- 1 teaspoon salt

- 3 cups old-fashioned oats

- 1/2 cup sweetened shredded coconut

- 1/2 cup chopped walnuts

1. Cream butter, shortening, and sugars until light and fluffy, approximately 5-7 minutes. This step is crucial for achieving a soft and tender texture in your cookies.

2. Beat in eggs and vanilla, ensuring that they are at room temperature to create a smooth and well-incorporated batter.

3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the creamed mixture and beat until well combined. This will ensure even distribution of the dry ingredients throughout the dough.

4. Stir in the oats, coconut, and chopped walnuts. These ingredients not only add a delightful crunch and flavour but also provide numerous health benefits.

5. Divide the dough in half and shape each half into a 10-inch-long roll. Wrap the rolls and refrigerate them overnight. This step allows the flavours to meld together and enhances the cookie's overall taste.

6. Preheat your oven to 375°F (190°C). Unwrap the dough rolls and cut them crosswise into 1/2-inch slices. Place the slices 2 inches apart on ungreased baking sheets.

7. Bake the cookies in the preheated oven until the edges begin to brown, usually around 8-10 minutes. Be sure to keep a close eye on them to prevent over-baking.

8. Allow the cookies to cool for 2 minutes before carefully transferring them to wire racks. This will ensure that they firm up without breaking apart.

Now that you have a batch of freshly baked oat and coconut cookies, it's time to savour their health benefits.

Oats are a fantastic source of dietary fibre, which helps regulate cholesterol levels and promotes heart health. They are also rich in antioxidants and essential vitamins and minerals, making them a perfect addition to a balanced diet. The shredded coconut adds a tropical twist to these cookies while providing healthy fats that can boost brain function and support weight management. Lastly, the walnuts contribute omega-3 fatty acids and antioxidants, which are known for their anti-inflammatory properties.

So, go ahead and indulge in these oat and coconut cookies this Father's Day. Not only will they put a smile on Dad's face, but they'll also provide a guilt-free treat packed with wholesome ingredients and health benefits.

Happy baking and happy Father's Day!
