Ingredients:


- 1/2 cup butter, softened

- 1/2 cup shortening

- 1 cup sugar

- 1 cup packed brown sugar

- 2 large eggs, room temperature

- 1 teaspoon vanilla extract

- 1-1/2 cups all-purpose flour

- 1 teaspoon baking soda

- 1 teaspoon salt

- 3 cups old-fashioned oats

- 1/2 cup sweetened shredded coconut

- 1/2 cup chopped walnuts


Directions:

1. Cream butter, shortening, and sugars until light and fluffy, approximately 5-7 minutes. This step is crucial for achieving a soft and tender texture in your cookies.


2. Beat in eggs and vanilla, ensuring that they are at room temperature to create a smooth and well-incorporated batter.


3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the creamed mixture and beat until well combined. This will ensure even distribution of the dry ingredients throughout the dough.


4. Stir in the oats, coconut, and chopped walnuts. These ingredients not only add a delightful crunch and flavour but also provide numerous health benefits.
