Mediterranean Rice Salad with Tuna
Ingredients
Serves 2
1.5 cup cooked basmati rice, cold
1 tomato, diced
1 cucumber, peeled and diced
1 green onion, chopped (or swap with diced red onion)
1/4 cup kalamata/black olives, pitted ad sliced
1/3 cup feta cheese, crumbled
1 can tuna, drained and flaked
2 tbsp olive oil, or to taste
1 tsp balsamic vinegar (or swap with 1 tbsp lemon juice)
1 tsp dried oregano
1/2 tsp dry or fresh basil
salt and pepper to taste
Method
In a large bowl, place all prepared vegetables.
Add the leftover, chilled rice to the bowl and toss.
Combine the flaked tuna and mix well.
In a separate bowl, whisk the oil, vinegar/lemon juice, and herbs. Pour the dressing over the rice and vegetable mixture and toss.
Top with olives and feta cheese and serve in a deep bowl or plate.

Note: If you don't have any leftover rice, make some according to package instructions and let cool (until no longer steaming) before adding it to the salad mixture. Also, feel free to add other ingredients such as sweet green or red peppers!
