Strawberry Cheesecake Shake

June is ALS Awareness Month! All month long, we will be sharing recipes, articles, and tips on how to best support an ALS diagnosis in yourself or a loved one.


ALS can affect the muscles of the jaw, mouth, and throat, leading to difficulty swallowing. This problem may affect up to 80% of people with ALS. This can make it harder for them to drink and eat. Trouble swallowing usually happens gradually, and with some changes to diet and how we eat and drink, a person can continue to enjoy their meals for some time. Many people living with ALS have problems swallowing – you are not alone.


One way to help is by adjusting your diet and preparing foods differently; for example, try this delicious recipe for Strawberry Cheesecake Shake! All the delicious flavour of your favourite dessert, without worry!



Strawberry Cheesecake Shake

Ingredients

  • 3 cups (750 mL) Strawberries, halved

  • 2 cups (500 mL) light vanilla ice cream

  • 3/4 cup (175 mL) Milk

  • 1/2 cup (125 mL) light spreadable cream cheese

  • 3 tbsp (45 mL) graham cracker crumbs

  • 1 tsp (5 mL) fresh lemon juice

  • 4 Strawberries for garnish


Instructions

In a blender, combine halved strawberries, ice cream, milk, cream cheese, graham crumbs and lemon juice; process until smooth and creamy, scraping down the sides occasionally.


Serve each shake garnished with a strawberry. Tip: Enjoy these shakes all year round. Freeze any washed, hulled, ripe, juicy Strawberries in the quantity needed. During preparation, defrost until ice crystals remain and proceed with the recipe.
