Zucchini Bread

Love Zucchini Bread but don't the carbs or added sugar?: Have no fear, this Low-Carb, No-Sugar Zucchini Bread is here! Adapted from SparkPeople, this zucchini bread recipe is sure to please everyone from diabetics to those managing their weight, and everyone in between.


Zucchini Bread

Serving Size: makes 15 slices; approx 1/2 inch thick


Ingredients

  • 3/4 cup grated zucchini

  • 8 eggs

  • 1/2 cup coconut oil (melted)

  • 1/4 cup stevia blend

  • 1 tsp vanilla extract

  • 1 1/2 tsp cinnamon

  • 1/2 tsp sea salt

  • 3/4 cup coconut flour

  • 1 tsp baking powder

  • 1/2 cup chopped walnuts


Tips

Make sure you get the lumps out of the coconut flour if mixing by hand.


Directions

  1. Preheat oven to 350 degrees.

  2. Line a medium-sized loaf pan with cooking parchment and lightly oil.

  3. Put all ingredients (except the walnuts) in a blender. Blend until well mixed and coconut flour is no longer lumpy.

  4. Stir in walnuts and pour into loaf pan.

  5. Bake for 1 hour.
